    But what if you could keep the deliciously indulgent part, and add a touch of healthy and guilt-free to it? Well, I present to you those Gluten Free Banana Pancakes made with Buckwheat Flour!

    And yes, these are Gluten Free Pancake made without Xantham Gum.

    What is Buckwheat

    Yes, you can read 'wheat' in buckwheat, but it is actually not wheat. Buckwheat comes from the seeds of flowering plants making it neither a cereal, nor a grain.

    Just like Quinoa, Buckwheat is an awesome gluten-free alternative to more commonly known grains and cereals. The Buckwheat Groats can be turned into Flour, which is the form used today.

    Buckwheat Flour and Groats can be used in many different ways in cooking and baking, but its most famous use is probably in the Japanese Soba Noodles.

    Gluten Free Buckwheat Banana Pancakes

    Buckwheat Flour Pancakes

    The most common way to make Gluten Free pancakes would be to simply use a 'Gluten Free Flour'. There are so many other options that are worth trying though - buckwheat flour being one of them.

    I adore baking with Almond Meal but it would probably be a little bit hard to completely substitute wheat flour for an almond one. With Buckwheat Flour however, it is much easier to simply replace plain wheat flour at a 1:1 ratio.

    Buckwheat is probably one of the first gluten free flour used in baking, although many other exists. For example; Sorghum Flour, Brown Rice Flour, Oat Flour, Chickpea Flour, Quinoa Flour or even Coconut Flour.

    Unfortunately, not all of these gluten free flour can be used at a 1:1 ration to replace wheat flour, so you may want to start experimenting. And Healthy Pancakes are a great dish to give these flours a try!

    Gluten Free Buckwheat Banana Pancakes

    Ingredients

    These Banana Pancakes with Buckwheat Flour are so easy and quick to make. This recipe is very similar to any other classic pancakes with one exception; the mashed bananas.

    They give these pancakes a delicious fluffy texture, plus it is the perfect way to use over-ripe bananas! Oh, and also a a great fun way to add more fruit to your diet! I mean, healthy pancakes!? Yes Please!

    I personally love the taste of Cinnamon in any desserts, cakes and baked goods so it was a no-brainer to add some to these Buckwheat Banana Pancakes.

    Cinnamon works magically with the sweet bananas the same way that Cinnamon works amazingly with Chocolate and Pears. It is a spice that always add a little je-ne-sais-quoi to desserts... I know that many people do not particularly like the taste of cinnamon so if it is the case for you, just skip it!

    Another thing that I love about making Banana Pancakes is that their natural sweetness can almost always replace any kind of processed sugar.

    The most ripe your bananas are, the sweeter they will be... I only added 1 tablespoon of Brown Sugar to this low sugar pancake batter because the bananas I used weren't overly sweet.

    I definitely encourage you to taste your fruits first and adjust the quantity of added sugar accordingly!

    Gluten Free Buckwheat Banana Pancakes

    Ingredients

    • 2 Small Ripe Bananas (about 120 gr), Or 1 Large Ripe Banana
    • 240 ml (1 cup) Full Cream Milk, or Dairy-Free Milk
    • 1 Egg
    • 130 gr (1 cup) Buckwheat Flour
    • 1 teasp. Baking Powder, Gluten-Free certififed
    • 1 tbsp. Brown Sugar
    • 1 pinch Salt
    • 1/2 teasp. Cinnamon Powder
    • Butter or Oil to grease to pan

    Instructions

    • Mash the Bananas in a medium-size bowl. Whisk with the Milk and Egg.
    • Add the Buckwheat Flour, Baking Powder (see note 1), Brown Sugar, Salt and Cinnamon Powder and mix until there are no more lumps.
    • Cook in a hot pan with some butter. Make sure to add more butter in between each round to avoid sticking.
    • Top with Maple Syrup, Sliced Bananas and Shredded Coconut.

    1. Not all Baking Powders are Gluten-Free; if you need this recipe to be Gluten-Free, make sure to check that you are using the right Baking Powder.
