Mini Strawberry Cheesecakes

These Mini Strawberry Cheesecakes with Strawberry Compote Topping are delicious light and flavourful treats that are perfect for afternoon tea or a party.

What you will need

Cookie Crumbs, Melted Butter, Strawberries, Cream Cheese, Sour Cream, Sugar, Vanilla, Eggs & a homemade Strawberry Compote.

Make the cheesecake crust by mixing the digestive biscuits crumbs and melted butter. Press into a muffin pan and chill.


Blend the strawberries into a puree. Mix the cream cheese, sour cream, strawberry puree, sugar and vanilla until smooth.


Slowly mix the eggs one by one, then scoop over the crust. Bake for 20 to 25 minutes then chill until set. Finish with the strawberry compote and fresh strawberry slice.
