Cook the Green Tea Soba Noodles in boiling water for 5 minutes, or as indicated on the label. Drain well and set aside to cool down.
Spiralize the Lebanese Cucumbers.Cut the Orange, Mandarin and Grapefruit in small segments, making sure you remove the bitter white bits. Put aside the Orange Zest and the Juice of half the Grapefruit to make the dressing. Chop the Spring Onions, Coriander and Mint.
Place the Green Tea Soba Noodles in a large salad bowl with the spiralized Cucumbers, Orange, Mandarin and Grapefruit pieces and chopped Spring Onions, Coriander and Mint.Top with the Sesame Seeds and Fried Onions.
Citrus Asian Dressing
Combine the Soy Sauce, Sesame Oil, Rice Wine Vinegar and Brown Sugar. Mix well until the brown sugar is fully combined with the liquid ingredients.Add the Grapefruit Juice and Orange Zest. Stir, then pour on the salad.
