These fresh Peach and Blueberry Popsicles are super easy frozen treats to make this summer. These healthy popsicles are packed with fruits and very low in sugar, making it a great guilt-free summer dessert and snack!
In a Medium size Saucepan, heat up the Coconut Cream, Lemon Juice and Syrup.When the syrup has dissolved, add the diced Peaches. Bring to a boil, then turn down the heat and let the Peaches reduce until they turn into a puree.
Transfer the puree into a Blender and blend for a few seconds. Do not over-blend it, it should form a thick puree.
Let the Peach Puree cool down completely.
For the Blueberry Puree
In a Medium size Saucepan, heat up the Water, Lemon Juice and Maple Syrup.
When the Syrup has dissolved, add the Star Anise Seeds and bring to a boil.Let the Star Anise infuse for 5 to 10 minutes, then remove from the liquid. If you want a stronger flavour, leave it infuse for longer.
Add the Blueberries, turn down the heat and let them reduce until they turn into a puree.
Transfer the puree into a Blender and blend for a few second with the Mint Leaves. Do not over-blend it, it should still be thick.
Let it cool down completely.
To Assemble the Popsicles:
Make sure both Purees have cooled down.
In Popsicles Molds, alternate 1 tablespoon of Peach Puree with 1 tablespoon of Blueberry Puree until almost full.Make sure to not fill them completely or they will run over when you add the sticks.
Add the Popsicle Sticks in the middle of each Mold, then transfer into the freezer.
Let the Popsicle set for at least 2 to 3 hours before eating.
