Raw Lime and Blueberry Cheesecake (Vegan)

For the Cheesecake Base

  • 1 cup Pitless Dates soaked overnight
  • 3/4 cup Walnuts
  • 1/2 cup Desiccated Coconut
  • 2 tbsp Coconut Oil


  • The night before making the cake, put the Dates in a large bowl and cover with warm water. Let them soak overnight.
    If like me, you forgot that step, try to soak them for at least 4 to 5 hours before blending.
  • Drain the Dates and place them in the blender / food processor with the Walnuts, Desiccated Coconut and Coconut Oil.
  • Blend in small pulses until a dough is formed.
    You do not want to over-blend it.
  • Prepare your cheesecake tin, preferably with removable edges/bottom and firmly press the dough on the bottom of the tin to form a crust.
  • Place into the freezer to set.
