For the Cheesecake Base
- 1 cup Pitless Dates soaked overnight
- 3/4 cup Walnuts
- 1/2 cup Desiccated Coconut
- 2 tbsp Coconut Oil
The night before making the cake, put the Dates in a large bowl and cover with warm water. Let them soak overnight.If like me, you forgot that step, try to soak them for at least 4 to 5 hours before blending. Drain the Dates and place them in the blender / food processor with the Walnuts, Desiccated Coconut and Coconut Oil.
Blend in small pulses until a dough is formed.You do not want to over-blend it. Prepare your cheesecake tin, preferably with removable edges/bottom and firmly press the dough on the bottom of the tin to form a crust.
Place into the freezer to set.
