These Lemon Curd Cookies combine two layers of buttery Shortbread Cookies and a homemade tangy Lemon Curd filling.
Prep Time: 30 Min
- Unsalted Butter – Icing Sugar – Lemon Zest – Egg Yolks – Plain / All-Purpose Flour - Lemon Curd
Cook Time: 30 min
Cream the Butter, Sugar and lemon Zest. Add the Egg Yolk then the Flour
Mix until a dough comes together then roll between two sheets of baking paper.
Chill the dough then cut out the cookies. Bake and fill with Lemon Curd
