    Peach and Blueberry Popsicles

    Summer is slowly coming to an end here in Australia, but that doesn't mean that you can't pretend you're still in the middle of it with these Blueberry Peach Popsicles!

    Making Popsicles is so fun and easy; you can mix and match so many different elements and flavours.
    After trying with Mango, Coconut and Raspberries last time, I decided to combine Peaches and Blueberries this week.

    I also tried something a bit different by also using Star Anise Seeds .
    The flavours is subtle but really adds something to the Popsicles!

    As always, that is of course optional and your Popsicles will turn out great without Star Anise.
    I cannot lie, I can't stop eating them... And I even had one for breakfast!

    Making Popsicles is not complicated at all, but requires some equipment. A Blender will make your life easier, and you will need Popsicle Molds. You can find many different types and shapes, so have fun with it! I had bought mine a really long time ago and had never used them. And to think I could have been eating delicious frozen treats like these all of this time!

    Peach and Blueberry Popsicle with Star Anise

    Peach & Blueberries Popsicles

    These fresh Peach and Blueberry Popsicles are super easy frozen treats to make this summer. These healthy popsicles are packed with fruits and very low in sugar, making it a great guilt-free summer dessert and snack!

    Ingredients

    For the Peach Puree

    • 2 Yellow Peaches
    • 1/2 cup  Coconut cream
    • 2 tbsp. Lemon Juice
    • 1 teasp. Maple Syrup

    For the Blueberry Puree

    • 1 cup Blueberries
    • 1 cup Water
    • 1 tbsp. Maple Syrup
    • 2 tbsp. Lemon Juice
    • 6 Star Anise Pods
    • Dozen Mint Leaves

    Disclaimer

    I highly recommend using the measurements in grams & ml (instead of cups & spoons) for more accuracy and better results.

    Instructions

    For the Peach Puree

    • Cut the Peaches into small cubes.
    • In a Medium size Saucepan, heat up the Coconut Cream, Lemon Juice and Syrup.
      When the syrup has dissolved, add the diced Peaches.
      Bring to a boil, then turn down the heat and let the Peaches reduce until they turn into a puree.
    • Transfer the puree into a Blender and blend for a few seconds. Do not over-blend it, it should form a thick puree.
    • Let the Peach Puree cool down completely.

    For the Blueberry Puree

    • In a Medium size Saucepan, heat up the Water, Lemon Juice and Maple Syrup.
    • When the Syrup has dissolved, add the Star Anise Seeds and bring to a boil.
      Let the Star Anise infuse for 5 to 10 minutes, then remove from the liquid. If you want a stronger flavour, leave it infuse for longer.
    • Add the Blueberries, turn down the heat and let them reduce until they turn into a puree.
    • Transfer the puree into a Blender and blend for a few second with the Mint Leaves. Do not over-blend it, it should still be thick.
    • Let it cool down completely.

    To Assemble the Popsicles:

    • Make sure both Purees have cooled down.
    • In Popsicles Molds, alternate 1 tablespoon of Peach Puree with 1 tablespoon of Blueberry Puree until almost full.Make sure to not fill them completely or they will run over when you add the sticks.
    • Add the Popsicle Sticks in the middle of each Mold, then transfer into the freezer.
    • Let the Popsicle set for at least 2 to 3 hours before eating.
