    Creamy Avocado Cilantro Lime Sauce

    They are back! Avocados are finally making a comeback (at an affordable price) on our supermarket's shelves and I couldn't be happier. I've been looking for any reason to use them and my latest experiment was as a Creamy Lime Cilantro Avocado Sauce.

    Originally, I made that recipe as a Salad Dressing. But it was so creamy and delicious that I couldn't help but use it on everything else! Making Sweet Potato Fries? Dip them in that Avocado Sauce. Roasted some Potatoes? Load them with it. Feeling like a Healthy Sandwich? Use it as a Spread.

    This recipe is so much more versatile than I expected, it quickly became a new Fridge Essential! Did I mention that it was Vegan?

    I love to experiment with Dressings and Sauce. There are so many possible ingredient combinations that the options are endless. Using Fruits in sauces or dressing is just a great way to bring freshness to your salads.

    Some of my favourite dressings use citrus fruit (I love super tangy dressings!) like this Garlic and Lime Dressing or this Citrus Asian Dressing. Why stick with basic Vinaigrette or Balsamic Dressing when you can find many other creative sauces?

    Avocado and Lemon are a classic combination, but I like to use Limes to get a slightly less sour taste. I know that some people hate Cilantro (have you heard about the scientific research claiming that it's a genetic thing?), but I love to add it to pretty much..anything!

    It's strong, herby flavour works perfectly with the creaminess of the Avocado and sharpness of the Lime.

    How to make Avocado Sauce with Lime and Coriander

    It is a super simple and easy recipe as well. All you need is a Blender. Throw all the ingredients in there, blend, adjust to taste and enjoy! If you want to make it even creamier, I suggest using some Coconut Cream.

    I tried that option and it created a la more subtle taste with a light, velvety texture. On a side note, if you do not have Coconut Cream in your pantry, you definitely should! You can use it in baking and for your savoury recipes, and it's a great non-dairy alternative to regular cream.

    This Creamy Vegan Avocado Cilantro Lime Sauce is the most versatile sauce ever! Use it as a Salad Dressing, a light dip or even as a dairy-free spread.

    Ingredients

    • 1 Large Avocado
    • 1/2 Lime Juice - or about 3 tbsp.
    • 1/2 cup Fresh Cilantro
    • 1/4 cup Extra Virgin Olive Oil
    • 1 Clove Fresh Garlic
    • Salt, Pepper, Cumin Powder - to taste
    • 1/4 cup Coconut Cream - Optional

    Disclaimer

    I highly recommend using the measurements in grams & ml (instead of cups & spoons) for more accuracy and better results.

    Instructions

    • Cut the Avocado in half and remove the skin.
    • Put the Avocado, Lime Juice, Cilantro, Olive Oil and Garlic, Salt, Pepper and Cumin Powder in a Blender.
      Optional: also add the Coconut Cream for a creamier texture.
      Blend until smooth.
    •  Taste and adjust if need.
      Add more Lime Juice, Cilantro or Olive Oil to adjust the texture if required.
    • Transfer into a sealed jar and keep in the fridge for a week.
