For this reason, I thought I’d write a fun “10 Vegetable Packed Recipes Ideas” list with awesome recipes from fellow bloggers.This post may contain affiliate links to products. Over these last year, I have grown more and more fond of my veggies. If you have read some of my other recipes, you must know how obsessed I became with some of them (hello, Beetroot – I am looking at you!) or how excited I get when I find unusual, beautiful or seasonal veggies at the supermarket. There are SO many ways to add more vegetables to our diet, we must start thinking beyond our simple green salad! My personal favourites are probably my Moroccan Spiced Pumpkin and Quinoa Salad topped with Avocado Sauce or this Rainbow Vermicelli Salad.

10 Veggie-Packed Meal Ideas
Sweet Potato Toast
I love the idea of using Sliced Sweet Potato as Toast, so I had to share this recipe made by Amanda from My Goodness Kitchen. She says that “these gorgeously simple sweet potato toast recipes are as easy as making a toasted sandwich but with the goodness of sweet potato and less dishes”. If it didnt sound yummy enough already, you can literally make your Sweet Potato Toast in the Toaster, then simply add your favourite topping!
Greek Zoodle Salad
Tamara from Beyond Mere Sustenance made this beautiful Greek Zoodle Salad that “has everything you love about a traditional Greek salad – salty feta cheese and kalamata olives, sweet tomatoes, crispy cucumbers, and tangy lemon dressing – all tossed with nutritious zucchini”. Who doesn’t link a reason to get their Spiralizer out, right!?
Beet, Carrot and Chickpea Salad
Pam from Sidewalk Shoes shared this beautifully colourful root vegetable salad. She topped it with a simple vinaigrette and Labneh, one of my favourite Middle Eastern Cheese dip!
She wrote: “I found these rainbow carrots at the store and fell in love with them. Pairing them with golden beets and regular beets, makes this Beet, Carrot and Chickpea Salad from Donna Hay not only good for you, but also gorgeous!“
Vegan Enchilada Bowls
Made by Debra Klein, this Mexican flavoured bowl is packed with veggies. She replaced the traditional grains with a Cauliflower Rice, roasted some Sweet Potato and Beans and added some freshly chopped Vegetables. I completely agree with her when she says that you can easily customise these Enchilada Bowls with your favourite veggies or whatever is in your fridge: “There’s no one way to do these vegan enchilada bowls. YOUR way is the best choice.”
Vegetable Noodle Stir-Fry
Spiralizing Vegetables is always a great way to add more veggies to your diet. Lorena from Diabetes Strong made this yummy looking Spirilized Vegetable Noodle Stir-Fry that is “absolutely perfect for a dinner or lunch that will keep you satisfied and full for hours“.
Cauliflower Steaks with Mushroom Sauce
Angela from Divaliicious Recipes shared a recipe for these super fun Cauliflower Steaks with Mushroom Sauce. How clever is it to use Cauliflowers that way!? The Cauliflower Steaks are topped with a creamy mushroom and cheese sauce. She says that she loves this recipe because it is so simple to make: “If you were having a “Meatless Monday” and wanted a hearty meal, this would be just right for you.”
Vegan Mediterranean Wraps
“These vegan Mediterranean wraps feature smashed chickpeas, colourful veggies and a tangy herby tzatziki sauce. These fast and easy vegan wraps can be made ahead for a packed lunch or quick snack when you’re on the go“, said Melissa from The Stingy Vegan. I love that even her sauce is packed with veggies!
Roasted Greek Salad
Jean from What Great Grandma Ate came up with this Roasted Greek Salad recipe that is great to bring to a Picnic or a Potluck. Topped with a Lemony Greek-Inspired Dressing, this Roasted Salad is so colourful that Jean described it as “Nature’s Candy“. Definitely a term that I am going to steal!
Sweet Potato, Broccoli and Carrot Tortilla Quiches
If you are trying to get your kids to eat more veggies, you may want to check out those Sweet Potato, Broccoli and Carrot Tortilla Quiches made by Kylie from Kidgredients. She used Tortilla instead of Pastry and I can imagine kids will go crazy for that! If your kids don’t like broccoli, she recommends to “swap them for zucchini as it has a different texture and is less “obvious” in the mini quiches”.
Zucchini Tomato Pesto Bake
“Don’t you just loveeee a fancy dish that’s easy to make and deliciously healthy?, asked Stacey from Stacey Homemaker? I sure do, and man, how amazing does this Zucchini Tomato Pesto Bake look!? She writes that you can substitute some of these veggies with others of your choice as long as they are easy to slice thinly.
